Secretly Healthy Hulk Pancakes
These pancakes are delicious, vegan, and are the perfect way to sneak some spinach into your child’s breakfast!

whole wheat flour

baking powder

unsweetened coconut milk
(water or any plant-based milk will work)

ripe banana

water

organic spinach

unsweetened coconut milk
(water or any plant-based milk will work)

ripe banana

water
1/2
tsp
cinnamon
(optional)

tsp
vanilla extract

large handful
organic spinach
Instructions
Mix together the flour, baking powder, and cinnamon in a bowl.
Add the unsweetened coconut milk and vanilla. Stir until just mixed. Remember not to overmix guys!!
Add the banana, water and spinach to a blender and blend until smooth.
Combine the green mixture into the batter and stir until just mixed.
Let the batter sit for 10 minutes while the griddle is heating up.
Pour the batter onto the griddle using a ladle, and top with chocolate chips (or whatever you want to add). Flip once bubbles start to form.
Add toppings and enjoy!
Recipe Notes
I use coconut milk because Gray can’t have almond milk, but any plant based milk will do!
You can really add as much spinach as you want. Just make sure that you add a little more flour if the batter seems to watery.
